Ginger Doodles adapted from LaurensLatest
Ingredients
½ cup butter
½ cup sugar
½ cup brown sugar
1 egg
¾ tsp vanilla extract
¼ cup molasses
1 tsp baking soda
1 tsp cream of tartar
½ tsp cinnamon
½ tsp ground ginger
½ tsp salt
1/8 tsp ground cloves
1/8 tsp nutmeg
2 cups AP flour
¼ cup sugar
2 tsp cinnamon
In mixing bowl combine butter, sugar, and brown sugar until creamy. Add egg, vanilla extract, and molasses, mix well.
In separate bowl, combine flour, baking soda, cream of tartar, cinnamon, ground ginger, salt, ground cloves, nutmeg together.
Add dry ingredients to liquid mixture and stir until blended. Refrigerate for 2 hours.
Preheat oven to 350, prepare pans.
In smaller bowl combine sugar and cinnamon together. Using teaspoon or cookie scoop, drop about a 1” rolled ball into sugar/cinnamon mixture to coat and place 2 inches apart on cookie sheet.
Bake 7-9 mins. Let cool on pan for 2 mins before transferring to cooling rack.
Makes approx 4 doz.
