Easy Lemon Shortbread Cookies adapted from (keepitsweet)
Ingredients
4 cups AP flour
1 cup butter (2 sticks)
1 1/2 cups sugar
1 1/2 cups powdered sugar
4 Tbsp lemon juice
1 Tbsp vanilla extract
1/2 tsp salt
Preheat oven to 350. Prepare pans with parchment paper.
Cream butter, sugar, powdered sugar together until light and fluffy. Add lemon juice, vanilla, and salt, beating until well combined. Stir in flour.
Using Tbsp scoop dough and round before placing on cookie sheet about 2 inches apart.
Bake for about 15 mins or until edges lightly browned. Cool on rack.
